 2.50 cups Brussels Sprouts
 2 tbsp coconut oil
 1 cup sliced Onion
 2 cloves garlic minced
 1 tbsp paprika
 1 tbsp cumin
 1 tbsp ground coriander
 2 tomatoes
 1 boneless skinless chicken breast
 0.50 cup chicken broth
 1 pinch pepper
 1 pinch salt

• Sprinkle chicken with salt, pepper and cumin.

• Select Saute on your instant pot, once is hot, add coconut oil.

• Sear chicken on both sides until Brown. Set manually 2 minutes.

• Remove chicken and add onions, garlic, paprika and cook until onions are translucent.

• Select cancel, and add all the spices. Add chicken back to instant pot along with chicken broth.

• Lock cover into place and seal steam nozzle. Set to 10 minutes. Do a quick release of pressure.

• Remove lid and add brussels sprouts tomatoes, and coriander, set for 3 minutes.

• Quick release and remove lid.

• Remove chicken and vegetables. Serve gravy over chicken and Brussels sprouts.
