This delicious Spanish recipe , chicken in almond sauce, or " pollo en pepitoria" in Spanish, is one of my favorite Spanish recipes, I love how almond creates a thick texture sauce and adds an exceptional taste, it also has a balanced nutrition features : • 218 Kilo-calories is the nutritional value. • Almond milk is lower in calories than whole milk, does not contain lactose and contributes significant amounts of proteins of high biological value and dietary fiber. • Contains carbohydrates of easy to assimilate and serves as "fuel" for the cells of the whole body.

Chicken in Almond Sauce

 1 cup Chicken Consomme ( Clear Soup)
 1 Chicken Breast, without skin
 1 cup Almond Milk
 1 tbsp Wheat Flour
 1 cup Chopped Green Onion
 10 sticks Spinache Leaves
 1 tbsp Olive Oil
 1 pinch Salt
 1 pinch Pepper

In a hot pot add the chicken consomme, chicken breast and leave for 10 minutes until cooked.

In another pot add the almond milk, the tablespoon of flour to thicken, the chopped green onions, salt and pepper to taste.

Remove slowly until a thick cream results. Add more flour to the mixture if you want the sauce to thicken.

In a previously heated frying pan, add the olive oil, gratiné the chicken for 2 minutes, you can add some spinach.

• Serve the chicken and gratin. Add almond sauce and spinach
