

In a large skillet, heat olive oil over medium heat.
Season beef with salt and pepper and add to the skillet. Cook for 2-3 minutes or until evenly browned.
Add beef, carrots, potatoes, garlic and onion to the slow cooker. Now stir in tomato paste, beef broth, rosemary, Worcestershire, paprika, bay leafs, caraway seeds and thyme until well combined; season with salt and pepper as per your taste.
Cover with lid and cook on low heat for at least 7-8 hours.
Whisk together ½ cup stew broth and flour in a small bowl. Now, Stir in this mixture into the slow cooker. Cover with lid and cook on high heat for the next 30 minutes, or until thick.
Serve garnished with parsley.
